Let's Make Tomato Sauce Plus Ball FreshTech HarvestPro Sauce Maker



Family trivia, with a tidbit of history thrown in:  My daddy told me something when I first started dating Chuck years ago.  He said, "You dating a mater masher"?  Yes he did! He had only a few years before been fighting in WWII against the Italians. That, of course changed when they became our allies,  Before then, the American soldiers called them 'Mater Mashers'.



I married that 'Mater Masher'. We do have lots of 'maters', He came from a long line of "Mater Mashers'.

Today's post is about making and canning your own Homemade Tomato Sauce.

I do like the meaty tomato for sauces
There have been many times that I've used all varieties of tomatoes to make sauce,
But these make for a thicker, richer sauce.

I have the pot covered in this shot, 
but first you should cook uncovered simmering down
The amount by about a quarter of amount
Then you may cover with a lid and reduce heat to thicken more
Be sure to check consistency and stir often.

I added Fresh Basil apx. 3 Tbs. chopped to a 4 qt. pot of my sauce
Basil is optional, if you use add it at the end of simmering
I wanted a basic tomato sauce, but you can make your own marinara
by adding your favorite ingredients
Just be sure to read precautions as to pressure or water bath canning



Use Canning & Pickling Salt when you are preserving
It prevents your beautiful canned goods from becoming cloudy.
I grew this basil in my MiracleGro AeroGarden and have tons of it on my windowsill now!

  • 1--25 lb. tomato box of Roma/Plumb Tomatoes  
  • Washed, quartered and processed through the Ball FreshTech HarvestPro Sauce Maker
  • Cooked down and thickened about 35-50 minutes to sauce consistency
  • Fill clean warm pint canning jars with sauce, add 1/2 teas. canning salt & 2 teas. ReaLemon Juice. (not fresh lemon juice, the bought jarred has more citric acid for preserving). 
  • Wipe jar rims clean, cover with warmed lids and screw caps.  
  • Place in Water Bath Canner.
  • Process in water bath for 35 minutes, turn heat off, remove pot lid.  Wait 5 minutes, then carefully remove jars with lifter to a draft free location.  
  • Leave undisturbed and check for seal after 24 hours.
  • Remove screw caps and store one level high in your cupboard or pantry (Do not stack as your product may have a false seal which may lead to Botulism). 
  • Yield:  11 pints of tomato sauce 
  • **Your yield may differ depending on the variety and juice in the fruit.**
  • Tomato Conversion Chart, which may come in handy if you are trying to figure out your yield.


Do you make your own sauce?  I have over the years, but have done it the hard way.  You know the make an x on tomato boil quickly in hot water, then dump into ice water to cool.  Peel, slice and cook, cook, cook until thickened..  I always used the regular tomatoes grown in our garden and cooked with the seeds.  Sometimes I would try to remove the seeds by hand before boiling.  All, I just  mentioned was extremely hard work.  

I know over the years I've thought about getting one of those Victorio Strainer/Sauce Makers.  For some reason, I just never did.  About a year ago I did purchase a Ball FreshTech HarvestPro Sauce Maker from Sur la table.  This thing sat in my pantry the entire time.  I'd never opened it, and found it the other day while cleaning and organizing that space.  We had a hurricane on the way and I had to inventory our food pantry.

PRODUCT REVIEW:  My results are I like it very much!  It makes sauce in a matter of minutes!  Some products that I call frivolous are truly not!  They are workhorses!  Yes I am glad I purchased this item.  Would I recommend? You bet I would!

  1. Wow! I have never seen a machine like that. I am intrigued, not that I have money to burn on a new gadget, but this looks like it would take a lot of the messy work out of spraining tomatoes for making sauce. I could start saving now for next years tomato crop :) Your sauce looks beautiful!

      I am like you too with machines like this and I'll bet it is because we are used to doing things ourselves. I tend to do things like my grandmothers and mother did. I can tell you that this was a breeze and I don't regret buying it. I found it on sale and hopefully if you decide to buy one you can too. Thank you for the nice compliment.
