Chunky Fruity Chicken Salad


I do like homemade chicken salad and love fruit so what a better combination to make.  Oh well guess this is semi-homemade because I used the Sam's Wholesale Rotisserie Chicken, instead of baking my own.  We like them for a change and so much can be made from them.  This is a very delicious recipe.  I threw everything in it but the bananas, cherries and nectarines we had on hand.  Hey maybe next time.


Note** As always your end result will only be as good as all of the ingredients you put into your recipes** Taste your ingredients and if they aren't good your recipe won't be good.


INGREDIENTS

1 rotisserie chicken skin and bones removed chopped 1/2 -3/4" thick
1 stalk fresh firm green celery chopped
1/4 cup chopped fresh basil
1 stem fresh dill chopped
Juice of 1 lemon
1/4 cup chopped walnuts
1/2 teaspoon salt or to your taste
1/4 tsp ground black pepper or to your taste
1 half large apple chopped not peeled
2 small cups (you know the little prepackaged dessert cups) mandarin oranges drained
10 large seedless red table grapes chopped in halves or quarters depending on how large they are
1/2 cup Dukes Mayo
1/2 cup Sour Cream


DIRECTIONS

Mix all ingredients, chill and serve on crisp lettuce with favorite crackers or bread.
I can tell you it won't last long!

Makes 6 large servings





I had Chuck to take his mother and her husband one of these salad fruit boxes the other day.
They loved it!
