Her pound cake has made it to a Nashville Tv Talk Show
It was sold for countless years at The Forest Lake Strawberry Field
Given away to hundreds and loved by all.
Mama was alive when I posted this in 2011 and she did smile. She wanted us to learn to make this cake. I think that a few in our family have mastered it and I am told that I have as well. I'm glad to pass along this love of a family favorite that she instilled in us. We Miss you mama and you're always with us.
My try at her cake. It has been my experience that any two people can make the same recipe and they will taste different. Everyone's taste different but delicious. The Johnson men loved pound cake. Needless to say from Grandmother Johnson on down each had their own pound cake recipe. I guess it is being passed down this love of pound cake to all of us. This is my Mama's recipe I spoke of in the last post.
Preheat oven to 350 degrees
Grease and flour tube cake pan
2 sticks butter softened (she only uses Land O Lakes unsalted butter)
3 cups sugar
6 eggs take out of fridge to warm-- room temperature
1 cup sour cream left to warm to room temperature
3 cups cake flour (she only uses Swan's Down Cake Flour)
1/4 tsp. salt
1/4 tsp. baking soda
2 tablespoons vanilla (she uses Watkins Vanilla Flavoring)
Cream butter in mixer
Add sugar beat good
Add eggs, one at a time, beating until mixed before adding another.
do this after each egg addition.
Add half of sour cream, mix
Add half flour, mix (sift flour with salt and baking soda)
Add other half of sour cream, mix
Add remainder of flour and mix thoroughly
Add vanilla flavoring
Bake for 1 hour and test with toothpick for doneness.
It usually takes mine about 1 hour and 20 minutes.
Cool on wire rack 15 minutes
slide flat spatula around cake in pan
slide small spatula or butter knife around middle tube
carefully turn pan over rest cake in hand and quickly put on wire rack upside down to cool
Then turn cake over to cool other side.
The finished product....not Dot's...One day I hope to get that
famous crust. She can make the top with the most crust ever!!!
