Sweet Potato Pie


















 My cousin Debbie gave me this recipe years ago and it is now one of my family's favorites. I wanted to share this with you.
This is such a simple recipe, but it does taste delicious.


Ingredients:

2 cups cooked mashed sweet potatoes
1 1/4 cups sugar
2 beaten eggs
1/4 cup whole milk
1 tsp. vanilla
1 stick melted butter
1/2 tsp. cinnamon

Optional  (I do add it from time to time and you can increase these amounts if you like a real spicy pie)
1/8 tsp. each of allspice, ginger and nutmeg 


Instructions:

Preheat oven to 350 degrees

Bake (for more sweet potato taste), or Boil a few sweet potatoes depending on size make sure you have at least 2 cups of pulp.
Melt butter
Add all ingredients mix quickly just until lump free
Pour mixture into unbaked pie shell
I find that a deep dish pie pan or shell works best
Bake 20 to 35 minutes or until lightly browned and baked thoroughly (thickened not jiggly in middle)
let cool on wire rack
Slice when cool top with whipped cream if you wish
refrigerate leftovers
