Dolly's Strawberry Banana Ganache


The macarons are from Chef Francois Payard.
I have to tell you they are one of the most delicious cookies that I've ever put into my mouth!









This is my first experiment and I wanted it to say Dolly made this!  Strawberries are a love of mine as most of you know.  This is what I came up with quickly to express that.


Dolly's Strawberry Banana Ganache

1/2 Cup White Chocolate (I used Nestle Premier White Morsels, what I had on hand)
1/4 Cup Heavy Cream
2 Tablespoons Strawberry~Banana Jam chilled  
1/8 teaspoon Pure Almond Extract (I used Sonoma Syrup Co. Blend)
Makes approximately 3/4 cup of ganache

1.  Place white chocolate, heavy cream, 1 Tablespoon Strawberry~Banana Jam in a small pot or double boiler.
*(You might want to put chopped white chocolate in a metal bowl and pour hot cream over to melt. I knew these morsels would be harder to melt so I just went ahead and put them in the pot with the cream)
 2.  Bring mixture to a boil on medium heat stirring occasionally to melt the morsels/chocolate, and to prevent sticking.
 3.  Remove from heat cover and let ganache sit for 2 minutes.
 4.  Whisk until smooth.
 5.  Place in refrigerator to chill overnight.

When needed take from refrigerator and let stand at room temperature for a short while to soften.
Stir in remaining 1 Tablespoon of  chilled Strawberry~Banana Jam, 1/8 teaspoon of Almond Extract, and add a small drop red food coloring if desired.
Stir until smooth.
Put in Pastry Bag with round tip *(It is not mandatory that you use bag & tip you can just spoon on ganache and spread if you wish).
Pipe about 1 Tablespoon into center of one macaron
Place other macaron on top
You will want enough filling to cover macaron to the edge neatly but not popping out of it.
* Special Note* You can substitute any jam of course but when you have the chance I advise making some of your very own strawberry/banana jam.* 




I think these would be great to serve and give for Christmas!
