Cheesy Potatoes


 Don't you just love cheese and potatoes?  I sure do come on in for the easy simple recipe.






INGREDIENTS
2 lbs potatoes
2 eggs
2 cups half and half
2 1/2 cups grated Cheddar Cheese
3 tablespoons butter
Salt and pepper


INSTRUCTIONS:

Preheat oven to 400 degrees

Put butter into large baking dish and place in oven while preheating. When melted remove from oven

Peel and slice the potatoes 1/8" thick.  Put into boiling salted water.  Boil about 4 minutes
remove from heat and drain. Cool slightly.


Sprinkle lightly bottom of baking dish with 1/4 cup of shredded cheese.

You will be layering this dish three times so divide ingredients accordingly:

Potatoes
Salt and Pepper
Cheese *** until last layer we will add milk egg mixture before cheese on last layer***
Heat half and half in medium saucepan on medium heat. Heat just until smoking and right before boiling but do not boil. 
Remove from heat

Beat the eggs thoroughly with wisk.  Add little of hot milk to beaten eggs. Stop and  wisk briskly. Whisking the entire time pour milk in very small stream into eggs.  Do this until thoroughly mixed.
Pour egg, milk mixture over potatoes. 
Top with cheese
Sprinkle with a little paprika

Bake 20 to 30 minutes until browned






***Note***
You may substitute half and half with whole milk, or 2 percent milk or you may use half heavy cream with (half milk or even water but not all water).
You can also cut down to one large egg
You may use low fat cheeses and even a mixture of different cheeses.
All are good but may not be as creamy as recipe calls for.

Serve while it is still very warm and it is delicious

    Very touching story about your grandma! I remember those things about my grandma as well. I sure miss her in the kitchen with her apron. You always knew it was gonna be good whatever it was she made.
